Black Bean Taco Soup


  • 1 tsp olive oil
  • 1 small onion (peeled and chopped)
  • 1 lb ground beef
  • 3 15 oz cans of black beans (drained and rinsed)
  • 1 28 oz can of diced tomatoes
  • 1 15 oz can of corn
  • 2 1/2 tbsp homemade taco seasoning (0r 1 packet of taco seasoning mix)
  • 1 packet ranch dressing seasoning mix
  • 4 cups water


  1. Add 1 tsp olive oil and chopped onion to a large pot or dutch oven and place over medium high heat.  Cook for about 3 minutes.
  2. Add the ground beef to the pan.  Cook on medium – medium high heat until no longer pink – about 5 minutes.
  3. Add the remainder of the ingredients and stir to combine.  Turn the heat up to medium high – high and bring to a boil.  Then turn down to medium – medium low and let simmer for 20 minutes.  Stir occasionally.
  4. Serve with chopped avocado, grated cheddar cheese and sour cream.
