2cans of black-eyed peasdrained and rinsed (or any beans you like)
2cupsof kalestemmed, rinsed, and torn or chopped
1teaspoonsalt
¼teaspoonred pepper flakesmore if you want it spicier
1cupwater or vegetable stock
¼cider vinegar
Pepper to taste
Instructions
1. In a large saucepan, heat the olive oil and butter until the butter is melted. Add the chopped onion and garlic. Cook on medium until the onions start to soften which is likely about 8 minutes.
2. Add the beans, salt, red pepper flakes, dried thyme, bay leaf, and water or stock and vinegar. Cover the pan with a lid and bring to a boil and then add the kale. Stir and then place the lid back on the pan.
3. Cook on medium heat for about 10 minutes or until the kale starts to turn bright green.
4. Taste and season with a little more salt if needed and a turn or two of freshly ground pepper. Add a little more water if the beans seem dry.
