The Best Roast Potatoes

Ingredients
  

  • Yukon gold potatoes you'll need about 2 potatoes per person.
  • Olive oil
  • Kosher salt
  • Freshly ground black pepper
  • Sprig of rosemary optional

Instructions
 

  •  
  • Preheat oven to 450 degrees
  • Dice Yukon gold potatoes (ensure all pieces are roughly the same size to ensure even cooking).
  • Toss in a roasting pan with enough olive oil until potatoes are covered (but not swimming in the oil). Make sure the pan isn’t too crowded.
  • Generously sprinkle kosher salt. Grind some pepper too, if you like pepper.
  • Roast for approx. 35-45 minutes.
  • Check potatoes every 10 minutes or so and shake the pan to prevent too much sticking.
  • You can finish with a sprinkling of fresh rosemary, but that's optional.
