Ingredients
- Yukon gold potatoes you’ll need about 2 potatoes per person.
- Olive oil
- Kosher salt
- Freshly ground black pepper
- Sprig of rosemary optional
Instructions
- Preheat oven to 450 degrees
- Dice Yukon gold potatoes (ensure all pieces are roughly the same size to ensure even cooking).
- Toss in a roasting pan with enough olive oil until potatoes are covered (but not swimming in the oil). Make sure the pan isn’t too crowded.
- Generously sprinkle kosher salt. Grind some pepper too, if you like pepper.
- Roast for approx. 35-45 minutes.
- Check potatoes every 10 minutes or so and shake the pan to prevent too much sticking.
- You can finish with a sprinkling of fresh rosemary, but that’s optional.
